Ingredients

  • 2 handfuls of broccolinii

    divided into florets
  • 4 mandarins

    sliced into rounds
Dressing
  • 1 tsp wholegrain mustard

  • 1 and 1/2 Tbsp olive oil

  • 1/2 tsp chilli flakes

  • Juice of 1 lemon

  • Zest of 1 lemon

  • 1 tsp manuka honey

  • 2 tsp chia seeds

Method

Blanch broccolini or broccoli in boiling water for a couple of minutes then run under cold water to bring out the colour.

Mix dressing ingredients well in a cup or jug.

Arrange broccolini (or broccoli) and mandarins on a platter and drizzle over dressing.
